Protein pancakes

Fluffy, high-protein pancakes made with coconut flour, perfect for a blood-sugar friendly breakfast or post-workout brunch.

Ingredients

  • 1 scoop vanilla protein powder (~30g)

  • 2 eggs

  • ¼ cup milk of choice

  • 2 tbsp coconut flour

  • 1 tsp baking powder

  • 1 tbsp keto sweetener (e.g. erythritol or monk fruit)

Toppings:

  • Mixed berries (about ½ cup)

  • 1 tbsp nut butter

  • 1 tbsp coconut yoghurt

Instructions

In a mixing bowl, whisk together the eggs, milk, protein powder, sweetener, and coconut flour until smooth. Let sit for 2–3 minutes to allow the coconut flour to absorb liquid.

Stir in the baking powder just before cooking.

Heat a non-stick skillet over medium heat. Add a drizzle of oil of your choice and pour batter into small pancakes (about 2 tbsp per pancake).

Cook for 2–3 minutes on each side, or until golden and cooked through.

Stack onto a plate and top with berries, a dollop of coconut yoghurt, and nut butter.
